Pu'er Tea
A unique type of tea from Yunnan province, Pu’er can be split into two main types – Raw and Ripe. Raw (aka Sheng Pu’er) is in fact quite similar to green tea in that it undergoes withering, fixing and drying. During the fixing stage however, leaves are generally sun-dried which doesn’t completely stop the leaf oxidation, meaning that even once completely dried, the leaves continue to slowly age and oxidise over time. Ripe (aka Shu Pu’er) involves an additional fermentation step, which was developed to speed up and mimic the natural aging process of Sheng Pu’er, resulting in a deep, dark and rich tea unlike any other.
